Tweet Level of Ease: Easy Preserving Method: Enjoy Now You Will Need: Salad: 8 oz grilled salmon (crumbled) 1 bunch fresh spinach (stems removed) divided into 4 portions 1 small red onion (sliced or diced) 1 tomato (sliced or diced) 1 cucumber (sliced or diced) 4 oz blueberries Dressing: ¾ cup salad oil ¼ cup rice wine vinegar ¼ cup mixed berry jam (get recipe here) 1 tsp fresh mint (minced) ¼ tsp black pepper ¼ tsp salt Directions: Salad: Place spinach (divided into 4 portions) into salad bowls and top with remaining salad ingredients. Dressing: Combine salad oil, rice wine vinegar, mixed berry jam, mint, pepper and salt in a food processor Mix for 1 minute Stand for 20 minutes so flavors combine then mix again just before serving.
